Family life in my house always revolved around cooking. Grandma preparing soup for the week for a full house or mom stuffing bags of fresh basil and cilantro to deliver to restaurants all over Greater Cincinnati. All my life I have been surrounded by food and the industry. At 18 I jumped into the restaurant world working in a few locally owned pizza restaurants. Always trying new recipes and finding inventive ways to use a pizza oven when I could experiment. After a few years and two pizza shops I moved away from restaurants and found myself out in California. What better job than working wood fired pizza? Any. One of the most labor intensive jobs out in the mountains believe it or not. Part of the job was chopping and splitting fuel wood for the pizza oven and 14' smoker. Which is when I learned the art of smoking meats and making desserts on a wood fire. During covid I started to do small catering gigs and I caught the taste buds of some people that thought I would do great in a restaurant. After meeting with the land lady and the opportunity to set up shop in a historical pizza shop in Covington KY I knew I had to do it, open up The Red Bird Deli.
